The Jean Luc Joillot estate was founded in 1929. In 1981, 20-year-old Jean-Luc Joillot and his mother Simone took over the estate, farming 6 hectares under the new Domaine Jean-Luc Joillot label. In the 1990s, Jean-Luc and Lydia Joillot expanded exports and acquired parcels of Pommard 1er Cru Les Charmots and Pommard 1er Cru Les Epenots. Simon Goutard trained as a winemaker under his stepfather Jean-Luc Joillot in 2015, and in February 2019, the fourth generation—Jeanne Joillot, Simon Goutard, and Grégoire Guidot—took over the family estate. Starting with the 2019 vintage, the domaine was renamed Domaine Georges Joillot in honor of Jean-Luc's father.

The 14-hectare estate has all parcels historically planted at a density of 10,000 vines per hectare. Grapes are 100% destemmed into 30 hl to 50 hl concrete vats, and vinification lasts approximately 15 days, with extraction by punching down (pigeage) and pumping over (remontage).
On VinoVoss, Jean Luc Joillot has 8 wines in stock: 5 red, 1 white, 2 sparkling. Their average rating is 4.1 out of 5 from 42 ratings.
