COS was founded in 1980. The estate name COS is an acronym of the founders' surnames: Cilia, Occhipinti, and Strano. Giusto Occhipinti is one of the winemakers of COS. The winery moved its headquarters to the Fontane premises in 2003 following restoration work. The 2007 vintage inaugurated the new cellar, where small wooden casks were permanently replaced by 150 amphorae.

The estate is located in Vittoria, in the province of Ragusa in southeastern Sicily. It has a little less than 30 hectares of vines and 18 hectares of olive trees, growing Nero d'Avola, Frappato, Grecanico, and Insolia. The estate practices biodynamic viticulture based on the teachings of Rudolf Steiner, implements winery wastewater phytopurification, and composts pruning residues without chemicals or synthetic preparations. COS produces natural wines low in sulphites, aged in amphoras, and uses terracotta vessels for vinification because they impart no aromatic characteristics to the wine. Its wines include Pithos, a Cerasuolo di Vittoria created in 2000 and fermented and aged entirely in amphorae.
On VinoVoss, COS has 1 wine in stock: 1 white. Their average rating is 3.9 out of 5 from 31 ratings.
