Cooper Mountain was founded in 1978 by Dr. Robert Gross and Corrine Gross, who planted Pinot Noir and Chardonnay on the slopes of Cooper Mountain, west of Portland. In 1987, the family produced their first label, a Pinot Noir, and Cooper Mountain was later certified organic by Oregon Tilth in 1995 and biodynamic by Demeter in 1999.

Located in the Willamette Valley, Cooper Mountain has locations in Beaverton and Newberg, Oregon, with the Newberg estate located in the Chehalem Mountains AVA. The property encompasses over 200 acres across seven vineyards: Old Vines, Meadowlark, Johnson School, Farmington, Corrine, Arborbrook, and Chehelam Mountain Vineyard. Grapes grown across the vineyards include Pinot Gris, Gewürztraminer, Tocai Friulano, Chardonnay, Pinot Noir, Gamay Noir, and Pinot Blanc.
