WINE DESCRIPTION
The Clos de l'Écotard is the flagship wine of the Chevré family, crafted from mature Chenin Blanc grapes grown on a south-facing limestone hill. The vineyard is meticulously maintained under organic and biodynamic practices. Minimal intervention is employed in the cellar, with whole-bunch fermentation taking place in barrels and demi-muids, followed by an aging period of one year on fine lees. A deliberate choice to use very little new wood allows the fruit and terroir expression to shine through.
