Maximin Grünhaus Abtsberg Superior is harvested from low-yielding old Riesling vines in the best parts of the Abtsberg vineyard. The name “Superior” is a reference to the estate’s monastic history, as in “Father Superior.” Grapes are harvested before being pressed and fermented in inert vessels at cool temperatures to retain purity of fruit and delicacy of aromas. The fermentation is halted prematurely to retain some sweetness that perfectly balances the racy acidity.
