La Chiara Gavi is made from the Cortese grape from vineyards located in the Gavi commune of Northwest Italy. The grapes are collected by hand, gently pressed with the aim of preventing oxidation to preserve the full aroma of the grapes. Fermentation takes place in temperature-controlled stainless steel tanks. Alcoholic fermentation is followed by a brief period of aging on fine lees with some gentle stirring to add texture and body before the wine is bottled ready for release.
