Kalliston Nykteri is a dry white wine originating from the volcanic island of Santorini, Greece. The wine is crafted from Assyrtiko grapes, which thrive in the island's unique, mineral-rich soils. The grapes are harvested during the night to preserve their natural acidity, a technique that gives the wine its name, 'Nykteri,' meaning 'working by night.' Fermentation occurs in stainless steel tanks, with a portion aged in oak barrels to add complexity. The result is a wine with vibrant acidity, citrus and stone fruit notes, and a subtle hint of oak, ideal for pairing with seafood and Mediterranean dishes.
