Vinos de Terrunos German Gilabert Brut Nature Reserva Cava is a distinguished collaboration between JPS and a seasoned vintner deeply rooted in Cava production. The meticulous vinification involves fermentation in stainless steel vats, with the base wine resting on the lees for 45 days. Employing the traditional Methode Classico, the secondary fermentation takes place in the bottle, followed by extended aging on the lees for 18 to 20 months before disgorgement. This Cava, a blend of 50% Macabeo, 30% Xarel-lo, and 20% Parellada, is cultivated in the Mediterranean climate, on sand and limestone soils, at an elevation of 350 meters. The vines, aged between 30-35 years, are cultivated using organic practices. The resulting wine is characterized by its fresh, fine bubbles, delivering citrus and mineral notes. It is medium-bodied, elegant, concentrated, and impressively dry, leaving a long-lasting impression on the palate.
