Finca Sobreno Ildefonso 2017

Crafted in limited quantities from 80-year-old vines in the estate's oldest vineyards, this wine bears the name of the San Ildefonso family, a collaboration between father Roberto and daughter Paloma, symbolizing the pinnacle of their winemaking heritage. Cultivated in limestone topsoil with a blend of fine and coarse sand, the hand-picked fruit undergoes meticulous manual selection. After destemming, cold maceration in 2,000-liter open fermenter tanks lasts 8 days, with manual submersion of the skin cap thrice daily. Following controlled temperature alcoholic fermentation, the wine macerates for an additional period to extract polyphenols. Malolactic fermentation transpires in French and American oak barrels from premier coopers, with 50% new and 50% 1-year-old barrels. Aging unfolds in these barrels for 18 months, featuring biannual rackings. A further refinement of at least 12 months occurs in the bottle. This meticulous process results in a wine that embodies the essence of tradition and commitment to quality.
