Williams Selyem was started in 1979 by founders Burt Williams and Ed Selyem in a Russian River Valley garage using a repurposed dairy tank. Williams designed the winery's inaugural 1979 labels under the name Hacienda Del Rio. The 1985 Williams Selyem Rochioli Vineyard Pinot Noir won the California State Fair Wine Competition sweepstakes. Later, Bob Cabral served as winemaker from 1998 to 2014.

At Vista Verde Vineyard, a six-acre nursery propagates virus-screened rootstocks and clones. Williams Selyem has maintained a proprietary yeast culture since 1984. Fermentation takes place in antique stainless-steel open-topped dairy tanks with foot treading, and wines are made with partial whole-cluster fermentation and no fining or filtering. Cellar operations utilize gravity flow and pressure transfer with inert gas instead of pumps, and its wines include Russian River Valley Pinot Noir.
