Odfjell began as a family project when Norwegian shipping owner Dan Odfjell arrived in Chile in the late 1980s. The winery is led by his sons, Laurence and Dan Jr. Odfjell. Francisca Palacios is the head winemaker of Odfjell Vineyards, having joined for the 2016 harvest.

Based in Maipo, where all of its wines are vinified, Odfjell was the first in Chile to feature a gravity-flow winery and was among the first to explore Cauquenes and Carignan. The estate operates three organic vineyards: Padre Hurtado in Maipo Valley, Tres Esquinas in Maule Valley, and Ribera del Río Claro in Lontué Valley. At the Padre Hurtado vineyard, Syrah and Malbec are grown using a vertical shoot positioned trellis system. Grapes are certified organic by EcoCert Chile, and the winery is certified sustainable. The wines are free from added flavorings, colorings, synthetic preservatives, pesticide residues, and GMOs. Its wines include Elusiva, Vigno, Aliara, and Zippora.
