I Pastini

I Pastini is a winery in Puglia’s Valle d’Itria, founded in 1996 and managed by the Carparelli family. Its first harvest took place in September 2003.

The estate lies between Locorotondo and Martina Franca and has 18 hectares of vineyards. It grows the white varieties Verdeca, Bianco d’Alessano and Minutolo, alongside the red varieties Susumaniello and Primitivo. The vineyards are treated exclusively with organic products and fertilized with green manure from various legumes. At harvest, grapes are picked by hand in the early morning to avoid breaking the berries, then the bunches are carefully selected and placed in small crates. The grapes are cooled before gentle pressing, and the resulting juice ferments at a controlled temperature.
