Hive & Honey

Hive & Honey is a Monterey County wine producer whose wines include Riesling and Gewürztraminer. Its estate vineyards are cooled until midday by marine air that sweeps off the Pacific Ocean and down the Salinas Valley each morning. More than 250 owl boxes have been installed to support biodiversity, while cover crops planted between vineyard rows each year help prevent erosion, improve soil health and support beneficial insects. The wines come from estate vineyards and are pressed and bottled in the estate winery. Here, the juice is kept at about 50° F in stainless steel tanks from start to finish to preserve its aromas and bright flavors. The winery also recycles all its water for vineyard reuse and composts all grape pomace, stems and seeds before spreading the compost back onto the vineyards.
