In 1891, Victor Ondet purchased the Chauvin estate, and Château Chauvin was classified in the first Saint-Émilion cru classification approved in 1954. Sylvie Cazes and her children Julie, Pierre and François Régimbeau acquired the estate in May 2014, and in 2015, Jérémie Gravier took over technical direction of the vineyard.

The 15-hectare estate is located northwest of Saint-Émilion, halfway between Cheval-Blanc and Butte de Rol, near the Pomerol appellation. The vineyard extends in a single continuous block around the property on clay-sandy soil with pseudogley and iron pan, and the grapes grown are 75% Merlot, 20% Cabernet Franc, and 5% Cabernet Sauvignon. Cellar renovations began in January 2021, including a new vat room, barrel cellars, and a tasting room designed by architect Philippe Ducos. Its wines include Folie de Chauvin, a second wine produced from young vines starting with the 2014 vintage.
