Amalaya is a winery founded in 2010 in the Altos Valles Calchaquíes of Salta, Argentina. It embodies the vision of Larissa and Christoph Ehrbar, successors of Donald Hess. The winery owns two vineyards on the outskirts of Cafayate: San Isidro and Las Mercedes. San Isidro lies below the winery at the foot of San Isidro mountain, while Las Mercedes is just outside Cafayate. Amalaya makes high-altitude blends from grapes harvested using agro-sustainable practices in Cafayate. During winemaking, grapes are harvested and selected by hand before fermentation in small concrete vats, followed by 12 months of ageing in French and American oak barrels. Its wines include Amalaya Corte Único, which comes from rocky alluvial soil.
