Achillée

Achillée is a wine estate in Scherwiller, on the Alsace Wine Route. The Dietrich family has placed its ecological convictions at the heart of its winemaking.

The estate is certified organic and biodynamic. Clay soils characterise Blienschwiller and Dambach-la-Ville, while sandstone is abundant on Hahnenberg. In the cellar, wines are made in stainless steel tanks, large wooden vats and barrels. Fermentation begins spontaneously with indigenous yeasts and house-made starters prepared exclusively from the estate’s grapes, without additions during fermentation. Sulfur is used only if needed at bottling, in very small doses. Its wines include Demeter-certified biodynamic Riesling, Gewurztraminer, Pinot Noir and Sylvaner.
