The secret to crafting a great Moscato lies in capturing the grape’s natural fruit aromas and vibrant flavors. Harvested at 24-25 brix, the grapes were fermented at 50-55°F for 20 days in advanced concrete tanks. Unlike many Moscatos, SIP contains no added residual sugar; instead, it achieves a natural sweetness through arrested fermentation. By lowering the temperature to halt fermentation at the perfect sugar level, SIP preserves the variety’s characteristic fruit notes. The result is a refreshingly crisp, clean wine that balances natural sweetness with lively, fruity flavors, delivering a delightful and satisfying experience in every sip.
