Healthy, diverse soil allows vines to thrive, a goal achieved by working harmoniously with nature. Since 2009, the winery follows EU organic regulations. The Gewürztraminer grapes come from the Dürkheimer Abtsfronhof site, a historic vineyard over 1,000 years old, once owned by the Benedictine Abbey of Limburg and acquired by the Fitz family in 1823. Located in Bad Dürkheim, this vineyard, surrounded by a sandstone wall, offers a unique terroir and microclimate. The vines grow on loamy sand with high mineral content and Tertiary limestone. Perfectly ripe grapes undergo a 10-hour maceration, with cool fermentation in stainless steel tanks halted to retain residual sweetness.
