Clos des Fous Subsollum Pinot Noir receives praise for its complex earthy undertones and vibrant red fruit flavors, balanced by smooth tannins and crisp acidity. While many appreciate its Chilean character and food versatility, some note occasional lack of body or finish. Reviews highlight a harmonious blend of rustic minerality with cherry/berry notes, showcasing Chile's Pinot Noir potential through sustainable practices.
A striking Pinot Noir with a depth that unfolds in layers, Clos des Fous Subsollum exudes aromas of kirsch-soaked cherries, ripe plums, dried cranberries, and earthy autumn leaves. The palate is silky yet structured, with a vibrant core of red fruit, delicate spice, and a whisper of minerality that lingers on the finish. This wine thrives with food—pair it with herb-crusted lamb, wild mushroom risotto, or a duck breast with cherry reduction. For a lighter touch, a simple charcuterie board with aged cheeses and flintd meats will let its complexity shine. Whether shared among friends or savored slowly, this Pinot Noir is a testament to the power of pushing boundaries in winemaking.
