WINE DESCRIPTION
This wine is produced through certified organic farming, holding the EU Bio label since 2011. Grown on steep, rocky slopes supported by primitive stone walls, it is cultivated without synthetic pesticides or fertilizers, using traditional methods like manure instead. Grapes are carefully pre-selected, then pressed directly. After overnight sedimentation, fermentation takes place in stainless steel tanks. The young wine rests on the lees for about six months before being bottled following a single kieselguhr filtration. "Blauschiefer" is delightful on its own, with cheese platters, fish, meat, or hearty vegetables.
