Haejoon
Wine that defies easy comprehension, with a clear and pale lemon hue. The nose is centered around by a subtle evenness of yeast, brioche, almond, and apple, with a subtle suggestion of hay and chamomile. As the texture develops, the notes become increasingly complex, with hints of rotten apples, cabbage, and apple peel emerging. The conclusion is dry and herbaceous, with a lingering bitterness that may be off-putting to some.
