Trimbo
After nearly three decades in the bottle, it requires gentle handling. After four hours, the olfactory profile is fully opened, with earthy undertones, rich fruit, and a full bodied coffee and oak note. The impression is remarkably complex, with tannins that have largely diminished, yet still provide a welcome freshness. Oak and plum are the dominant layers on a remarkably mellow and polished finish. Surprisingly, the wine is notably well-suited to mature cheeses and cured meats. Its persistence is impressive, unfading almost seven seconds. It is clear that this wine has reached its prime and should have been consumed within a more recent timeframe.
