In Marche, Pecorino are usually macerated for longer on the skin or the must, to create a full-bodied, more complex version. The best examples of Pecorino can be found in Offida DOCG. Unsurprisingly, Pecorino pairs well with the cheese sharing the same name, Pecorino cheese. It also ges well with fish or poultry with creamy sauce, and light pasta dishes.
