Assyrtiko is a white grape variety native to Greece, prized for its freshness, minerality and aromatics. It is widely planted across the country with its home being Santorini, where it produces some of Greece's most celebrated wines.
Assyrtiko is a white grape with aromas of citrus, melon, herbs, honey and white flowers are common, as well as salty minerality, almond and spice. On the palate, it is medium-bodied and crisp with a firm acidity and a lingering finish.
Assyrtiko is grown throughout the Aegean and Ionian Islands, the Peloponnese, Crete and Attica. In Santorini, volcanic soils give the wines a distinctive smoky character and high acidity. Assyrtiko is a vigorous and drought-resistant variety, which needs minimal intervention in the vineyard and thrives in hot climates. In the winery, it is often fermented and aged in stainless steel tanks to preserve its freshness and aromatics. The wines of Santorini are the most well-known, with a distinctive smoky, citrusy character and high acidity. The wines of Crete are more full-bodied and have a riper fruit character, while those from the Peloponnese are more aromatic with a hint of spices. Assyrtiko pairs well with seafood and dishes with high acidity. It is also a good match for cheese, salads and grilled vegetables.
Assyrtiko is also used for the production of the sweet Vintanto wines.
