Thörle is a wine estate whose vineyards lie almost entirely in Saulheim. The family’s ancestors worked in viticulture as early as the 16th century. In 1985, Rudolf and Uta Thörle began selling their own wines, and the mixed farm gradually became a wine estate. Their sons Christoph and Johannes took over in 2006. A new winery at Norenberg was inaugurated in 2019.

The vineyards in Hölle, Schlossberg and Probstey have very calcareous soils. Riesling occupies 60 percent of the vineyard area, alongside Spätburgunder, Silvaner, Weißburgunder, Sauvignon Blanc and Chardonnay. Vineyard work includes strict yield reduction and hand harvesting, and 2022 was the first certified organic vintage. In the cellar, Christoph and Johannes introduced skin contact, and all wines ferment spontaneously. Red wines mature in oak barrels, while whites age in stainless steel tanks and wooden casks of 500 to 1,200 liters.
