St. Michael-Eppan has 320 grower families farming 390 hectares of vineyards. Klaus Pardatscher has served as President since 2019, and Jakob Gasser was appointed winemaker in 2024.

Most Pinot Bianco, Sauvignon, and Pinot Nero vineyards lie on Mendola massif slopes in Appiano Monte at 400 to 700 meters. Pinot Grigio, Chardonnay, and Gewürztraminer are cultivated along the Alto Adige Wine Road surrounding the winery at 400 meters, while Müller Thurgau and Riesling grow up to 900 meters through heroic viticulture. Lagrein is planted in the Bolzano basin, Merlot and Cabernet run from Lake Caldaro along the Wine Road to Cortaccia, and rare remaining Schiava vines occupy historic Oltradige zones. A 30,000 m³ gravity-flow cellar was completed in 2020 for grape intake and processing, and the historic cellar was completely renewed with more than 50 large oak casks. Beginning in the 1980s, select wines have been matured in small French oak barriques. Its wines include Riesling Montiggl, produced from grapes grown around Lake Monticolo at 550 meters, and Appius, aged in truncated-conical satin bronze steel vats.
