Simon Busser inherited vines from his grandfather. He learned his winemaking style from his father and neighbors in Praysac. Along a stretch of the Lot river outside Cahors, he farms around 5 hectares of Côt and Merlot, along with Trousseau, Savignin, and Chenin Blanc that he grafted. Since 2008, he has practiced organic viticulture with a horse-drawn plough and zero-additive winemaking. His winemaking process uses ripe grapes with significant extraction and élevage in large wood or concrete vessels.
