Founded in 1975, Laimburg is part of the Laimburg Research Centre (Versuchszentrum Laimburg). In the late 1980s, the winery expanded into the red porphyry rock of Mitterberg to create space for barrel and bottle storage. In 2003 and 2005, the cellar was expanded by 6,000 m³ with a new barrique cellar, white wine cellar, and connecting tunnels.

Musts are fermented in stainless steel tanks ranging from 10 hl to 80 hl, while the rock cellar provides a naturally constant room temperature of around 14 °C for barrique and bottle aging. In tunnels blasted into porphyry rock, wines of the Burgselektion mature in small oak barrels for 15-20 months. Tannic red wines are released after 1 to 3 years of barrel aging, and sweet wines after about 1 to 2 years of aging. Its wines include Alto Adige Chardonnay Riserva DOC Dòa 2022, Alto Adige Merlot Riserva DOC 2023, Alto Adige Gewürztraminer Riserva DOC Elyònd 2023, and Alto Adige Sauvignon blanc Riserva DOC Oyèll 2024.
