Born and raised in Savoie, founder Jean-Yves Péron studied winemaking in Bordeaux in the late 1990s. After school, he spent time working for Thierry Allemand in Cornas and later with Bruno Schueller in Alsace, training under them and considering both his mentors.

In 2004, he returned to Savoie and began making his own wine in the village of Chevaline. The estate is divided into several micro-parcels containing Mondeuse, Jacquère, Altesse, and Roussanne, and farming is organic and biodynamic without certification. Péron also launched a négoce project to expand production and make pear cider.
