Château La Tour de l'Évêque was once an ecclesiastical property and the summer residence of the bishops of Toulon. The Sumeire family, established in Trets at the foot of Montagne Sainte-Victoire since the 13th century, acquired the estate near Pierrefeu-du-Var in 1958. Régine Sumeire oversees the continuity of the family work.

The vineyard covers 78 hectares with an average vine age of 20 years, growing Cabernet-Sauvignon, Cinsault, Grenache, Mourvèdre, Syrah, Rolle, Sémillon, and Ugni-Blanc. Farming practices include organic farming, biodynamics, horse plowing, manual harvesting, and massal selection. The estate holds Biodyvin certification, with earlier vintages outside its scope. In 2011, a multi-level cellar was built for gravity-flow winemaking. Fermentation is carried out with indigenous yeasts, and vessels used include stainless steel tanks, concrete, barrels, jars, and concrete eggs. Its wines include Pétale de Rose, which was created in the 1980s.
