Stillman St. Chardonnay is a bold, fruit-forward wine produced from grapes sourced from Sonoma County. The grapes were harvested, pressed and fermented in used, old French oak barrels. Following the alcoholic fermentation, part of the wine was matured in barrel on lees (decomposing yeast) with regular stirring for around 10 months. This process helps improve the texture of the wine by giving it greater breadth and body. The remaining part of the wine was aged in neutral vessel to retain freshness and vibrancy of fruit. The separate components were blend before the wine was bottled for release.
