WINE DESCRIPTION
Shannon Vineyards Sanctuary Peak Sauvignon Blanc is a tropically-scented expression of Sauvignon Blanc, coming from the cooler Elgin region located within South Africa's Western Cape. Following the harvest, the grapes are sorted, destemmed and crushed. Selected parcels undergo a period of skin contact to capture the full aromatic potential of the wine. After a gentle pressing, the juice is fermented at cool temperatures in stainless steel tanks before being bottled ready for release.
