Schloss Vollrads Riesling Spätlese is a sweet white wine from the Rheingau region of Germany. Made exclusively from Riesling grapes, this wine exhibits Riesling's hallmark vibrant acidity. The region is noted for both its cool climate and a long growing season that stretches into the fall season allowing the grapes to achieve a high level of ripeness. The winemaking is focused on preserving the fruit expression. Only the ripeest grapes are selected and their juice is fermented in neutral vessels at cold temperatures. The fermentation is stopped early by chilling to create a sweet style with the sugar elegantly balanced by the vibrant acidity. Whilst the wine is enjoyable immediately for its lush ripeness and well-defined peach and apricot fruit it will develop complex petrol notes if cellared. In addition to desserts, its sweetness makes it a good pairing for spicy dishes like chilli and garlic mussels
