WINE DESCRIPTION
This wine is made from Melon de Bourgogne grapes grown on deep, gravelly-clay soil over a subsoil of flaky gneiss. Certified organic (EG Bio, FR-BIO-01) and biodynamic by Biodyvin, it is a producer-bottled wine. The wine undergoes spontaneous fermentation with natural yeasts and minimal added sulfur. The winemaking process includes gentle pneumatic whole-bunch pressing, light must clarification by settling, and a slow fermentation lasting one to two months. The wine is then aged for eight months on the lees, which are occasionally stirred to enhance texture and complexity.
