Parés Baltà Garnatxa Hisenda Miret is a captivating single-varietal Grenache wine from old vines, grown organically at the Cal Miret estate in the Penedès region. This nearly extinct Grenache varietal boasts enticing elegance and a velvety smoothness on the palate. Crafted by the passionate visionaries María Elena and Marta, this wine reflects their dedication to quality winemaking. Their innovative approach, such as green harvesting in the historic vineyard, aimed at intensifying grape concentration for an expressive and honest Grenache wine. Despite tensions among generations in the winery, their daring endeavor paid off, yielding an extraordinary wine that vindicated their boldness. The winemaking process involves meticulous manual harvesting in small crates to prevent grape oxidation, followed by gentle pressing upon arrival at the cellar. Fermentation takes place at 20ºC in stainless steel tanks for three weeks with daily pump-overs. The wine then ages for five months in new and second-year French oak barrels, resulting in a wine of biodynamic grapes with minimal cellar intervention, perfectly suited for vegan enthusiasts.
