WINE DESCRIPTION
The ripasso technique involves pouring the base Valpolicella wine directly into the vats where Amarone has been previously pressed, allowing it to rest in contact with the freshly pressed Amarone pomace for about 15-20 days before barrel aging. This process imparts some of the distinctive aromas of Amarone to the wine. Alternatively, the ripasso method can also be performed with the freshly pressed pomace of Recioto, resulting in a slightly sweeter Valpolicella Ripasso. This traditional technique enriches the wine, adding complexity, body, and a hint of the rich, dried-fruit notes characteristic of Amarone or Recioto wines.
