The vines, over 50 years old, grow in soils composed of limestone and Kimmeridgian marls, a terroir that contributes to the wine's complexity. The wine is fermented with native yeasts and aged on its lees in tanks for several months before bottling. Deschamps focuses on minimal intervention, allowing the terroir to express itself fully in this Pouilly-Fumé.
