WINE DESCRIPTION
J. Moreau & Fils Chablis Grand Cru 'Valmur' is made from Chardonnay grapes grown in the sloped Valmur vineyard, which is known for its limestone soil composition and ideal sun exposure. The winemaking process involves careful selection, gentle pressing, and fermentation in a combination of steel vats and oak barrels. The wine then undergoes a process called malolactic fermentation where the sharper malic acids are converted to lactic acids which helps soften the acidity and contributes buttery aromas. Maturation takes place on lees to add texture and body to the wine for a period of around 18 months prior to release.
