WINE DESCRIPTION
J. Moreau & Fils Chablis 1er Cru 'Mont de Milieu' is a mineral and restrained dry white wine. After harvesting and sorting, the grapes are pressed with the resulting juice being transferred into a mix of old oak barrels and inert vessels to begin fermentation. The wine then undergoes a process called malolactic fermentation where sharper malic acids are converted to lactic acids; this helps soften the acidity and contributes buttery aromas. The wine is then aged for a period on lees adding texture and body to the wine before it is bottled ready for release.

On the palate, it is balanced and well-structured, with crisp acidity and hints of pear, lemon and freshly churned butter, complemented by a refreshing mineral finish.
