The near-constant coastal winds yield smaller clusters, berries with thicker skins, and a vibrant acidity. Harvested by hand, Pla de Gates undergoes a night of cooling, partial destemming, and a brief maceration, followed by a prolonged, gentle pressing. This process captures the full aromatic and phenolic potential, resulting in a wine that reflects the essence of these two exceptional grape varieties.
