WINE DESCRIPTION
Elvi Cava Brut is a crisp, sparkling wine produced using indigenous varieties that includes Xarel-lo, Parellada and Macabeo. It is produced using the traditional method, which involves a second fermentation in bottle similar to Champagne. The wine is matured in bottle for a minimum of 9 months, creating a sparkling wine with a creamy-textured mousse. The wine is disgorged after ageing. This process involves ridding the bottle of its sediment, before topping it up with a touch of sugar that helps to balance the acidity.
