Lalume, crafted by Dominio do Bibei, is a distinguished white wine originating from the Treixadura grape variety, within the esteemed D.O. Ribeira Sacra. Founded in 2000 by a group of visionary oenologists, Dominio do Bibei aims to showcase the natural virtues of the Ribeira Sacra region in the most authentic manner possible. Nestled in Langullo, Orense, this innovative winery, mentored by Sara Pérez and René Barbier, seamlessly integrates into the rugged landscape, employing traditional slope construction to harness gravity for winemaking. The diverse topography of Ribeira Sacra, ranging from 200 to 700 meters above sea level, imbues indigenous grape varieties with a rich array of nuances. Lalume's grapes, handpicked from vines aged 10 to 30 years, thrive in granitic sand, clay, and shale soils. Meticulously selected and sorted by hand, the grapes undergo individual vinification tailored to their origin, soil, and altitude. Fermentation occurs in various vessels, including barrels, large wooden vats, concrete, or stainless steel tanks, at controlled temperatures. Finally, Lalume matures on its fine lees in stainless steel tanks, culminating in a wine that epitomizes the essence of Ribeira Sacra's terroir with finesse and distinction.
