WINE DESCRIPTION
The Grand Vin Blanc de Bourgogne from Pernand-Vergelesses is made from Chardonnay, planted in the early 2000s on new, well-exposed southwest-facing terrain, though challenging due to steep slopes. The name "Combottes," derived from "combe," reflects the hilly nature of this plot. For vinification, grapes are harvested in small crates to keep them intact and gently pressed using a pneumatic press. The juice undergoes a 24-hour cold settling before fermentation in barrels, 30% of which are new. The wine matures on the lees with bâtonnage until July, followed by bottling after 12 months of aging.
