G. B. Burlotto Viridis Langhe Sauvignon is a meticulous creation by the esteemed producer G. B. Burlotto, hailing from Langhe in the Piedmont region in Italy. Harvested by hand, the focus is on preserving fruit integrity, enabling a selective process in the cellar. After destemming and a gentle press, certain vintages may undergo controlled skin maceration. The must undergoes cold static cleaning, leading to an alcoholic fermentation in steel tanks at a controlled temperature, preserving the grape's innate aromatics. Malolactic fermentation is deftly avoided through refrigeration, allowing refinement on fine fermentation lees in stainless steel tanks. Bottling typically occurs in late winter or early spring, resulting in a Sauvignon Blanc that beautifully balances purity of fruit and aromatic complexity.
