Rooted in a commitment to traditional winemaking practices, Clos Lentiscus embraces biodynamic farming methods, eschewing pesticides and herbicides. Situated in the heart of Garraf Natural Park, their vineyards sprawl across approximately twenty hectares of sandy-limestone soils, predominantly facing south. This particular wine, Perill Noir Carinyena, showcases indigenous Carinyena grapes grown on clay-limestone soil. Hand-harvested, the grapes undergo a 15-day maceration in 1,000-liter foudres and 500-liter amphorae, with only the cap moistened. Fermentation occurs with native yeasts in these vessels, where the wine also ages for 18 to 24 months, embodying a distinctively natural style that reverberates with the essence of its terroir and biodynamic ethos.
