The grapes were de-stemmed and fermented in concrete tanks using wild yeasts, with techniques like pump-overs and manual punch-downs during a 40-day maceration. The wine aged for 14 months, with 90% in demi-muids (600L) of varying ages and 10% in a terracotta amphora (500L), resulting in a beautifully crafted and nuanced wine.
