Borgo Conventi Sauvignon Collio is a distinguished white wine from the renowned Collio DOC region in Italy. Made entirely from Sauvignon grapes, the vineyards benefit from southeast and east exposures, and soils derived from the disintegration of marl and stratified sandstone, which are clayey at higher elevations and finer in the foothills. The microclimate features mild temperatures, rainy springs, and hot, dry summers, with vineyard ages ranging from 10 to 45 years. Harvested in the early morning and gently pressed, fermentation occurs in stainless steel tanks over approximately 10 days with temperature control. Select grapes undergo brief cold maceration before pressing. After fermentation, the wine rests on fine lees throughout the winter, achieving a refined character before bottling in spring.
