This wine's golden tone is akin to of a bracing summer day, evoking the essence of Manzanilla in Sherry, yet it retains a subtle sweetness, a trait that sets it apart from its peers. but I appreciate its unique character, I must caution that it may not be the best fit for those seeking an extremely dry experience. The nose is a multi faceted tapestry of walnut, persimmon, toffee, vanilla, oak, smoke, roasted peanut, and theater popcorn, with a full-bodied boldness and high acidity. The taste is a seamless blend of sour plum, Japanese plum wine (Ume Shu), caramel, toffee, toast, dried apricot, charcuterie, mineral, and saline notes, culminating in a mildly sweet finish.
