Novac is a hybrid grape variety that is grown in Romania, Moldova, Bulgaria and Serbia.
Novac produces a deep red wine with a medium to full body. Novac wines are fresh, juicy and nervy, with soft tannins unless bolstered by oak. They are distinctively dark-fruited and acidic.
Novac is grown in Oltenia in the south west and Romanian. Novac is difficult to grow, being sensitive to rain and prone to fungal diseases, with a short harvesting window. In winemaking, the dark-fruit aromas may be lost, so it is often blended with international varieties. Novac pairs well with a wide range of dishes, from red meats to game and rich stews. Its smoky notes make it especially suited to dishes with a charred flavour.
Prinz Ştirbey is currently the only producer of a varietal Novac wine.
