Blauer Wildbacher is an ancient red grape variety from Austria, grown mainly in the eastern part of the country. The variety is used to produce the local rose wines called "Schilcher"
This grapes are of purple color and produces wines with distinct aromas such as, fresh raspberries, cherries and cranbierries. The acidity is extremly high, making it the perfect grape for the production of rose wines. Where is it Grown: Blauer Wildbacher is mainly grown in the sout-east of Austria, particularly in the Styria region near the Slovenian border. Viticulture and Winemaking: Blauer Wildbacher grapes are very late ripening and usually harvested in late September and October. The wine made from these grapes is usually a dry rose wine with a piercing acidity. Also some sparkling wines are made and to a lesser extent, red wines. Regional Styles: Blauer Wildbacher rose wines tend to be fresh and light with high acidity and notes of fresh raspberries, cherries and cranbierries. Food Pairing: Blauer Wildbacher wines are best paired with lighter dishes such as fish and seafood, white meat and soft cheeses, or simply as aperitif. Fun Fact: Italy has about 10 hectares of vineyards planted with blauer Wildbacher. In Italy the variety is simply called "Wildbacher".
